Yatsuhashiya Bairin Tea Shop founded in the forest of Shogoin Temple in the first year of the Genroku era was the birthplace of the Nishio Yatsuhashi. In 1689 (Genroku 2), a simple rice cracker in the shape of a bridge, which became the prototype for the current Yatsuhashi, was born. Since then, while inheriting over 300 years of history, the store has earned countless laurels as it continues to spread Yatsuhashi’s deliciousness to foreign countries since the Meiji era. In 1889 (Meiji 29), it won a silver medal at the Paris World Expo and made is name known to the world. It has its current round graceful shape as a result of it being hard to break as a portable food. Additionally, the store also introduced a fresh Yatsuhashi with filling, which has become familiar to many people. The fresh Yatsuhashi is now widely known as the famous confectionery that represents Kyoto. The store is eager in its pursuit of new flavors and tastes, and it also has a wide range of popular confections with a Western twist.
Picture on the right: The Yatsuhashi with a crispy texture has been popular since its conception. Aside from the original cinnamon flavor, there are other flavors such as matcha, sesame, and banana.

To the east of the flagship store is the restaurant and café. It is on the site of a Taisho era mansion designated as one of “the buildings or gardens chosen by Kyoto citizens to preserve as a part of Kyoto’s assets” in 2012. Guests can relax and enjoy Kyoto-like meals and confectionery while admiring the wonderful garden.
